What Shapes the Style

Abel is made from a single clone of Pinot Noir, harvested by hand and fermented in a small fermenter using wild yeast. The wine remains on skins for 38 days before being pressed to three barrels of French oak, all of which are new.

The wine is matured in barrel for three years prior to bottling, followed by a minimum of three years of bottle ageing before release. This extended maturation allows structure, integration and longevity to develop while retaining precise Pinot Noir detail.

The wine is unfined, unfiltered and vegan-friendly.

Enjoyment & Occasion

Abel is a wine built for cellaring and careful enjoyment. While drinking well now, it is designed to evolve over decades, with the potential to cellar for up to 30 years.
